The article presents a speech entitled "Engel's Law" by Rulon Pope, a professor of economics at Brigham Young University (BYU), delivered at BYU on May 15, 2012. It discusses food consumption and demand. Particular focus is given to Engel's Law, an economic observation which states that as income rises, the proportion of income spent on food falls.
