- Abstract
Delta 4-desaturase, sphingolipid 1 ( I DEGS1 i ), elongation of long-chain fatty acid 6 ( I ELOVL6 i ), fatty acid-binding protein 3 ( I FABP3 i ), fatty acid-binding protein 4 ( I FABP4 i ), fatty acid synthase ( I FASN i ) and stearoyl-CoA desaturase ( I SCD i ) genes are well-known candidate genes that harbor mutations associated with fatty acid composition in meat. The I DEGS1 i , I ELOVL6 i , I FASN i and I SCD i genes result in the desaturation of fatty acids during the metabolism of fatty acids and the I FABP3 i and I FABP4 i genes in the lipid-binding protein family regulate fatty acid uptake and transport. Five SNPs in the four fatty acid-related genes ( I FABP3 i , I FABP4 i , I FASN i and I SCD i ) were genotyped using the PCR-restriction fragment length polymorphism (PCR-RFLP) method.[[8]] Four SNPs in the I DEGS1 i and I ELOVL6 i genes were genotyped using the Fluidigm array system (Fluidigm SP ® sp 192.24 SNP Type™; BioMark, San Francisco, CA, USA).
