- Abstract
The opening of Thy National Park in North West Jutland in 2008 was a landmark event. In the years around the opening, the idea of a "Taste of Thy" gradually evolved, viewing the area of Thy as a "terroir" and the home of a unique culinary culture. This article examines the concept of the "Taste of Thy" by focusing on some of the plants that have a long connection to the place but also go into the foods associated with it. Through interviews with a number of local culinary professionals we analyse how the plants in different ways contribute to the creation of a Thy terroir - as ingredients, means of production or storytelling. We argue that the roles these plants play in the new terroir contain numerous paradoxes in relation to their historical significance. Thy as terroir becomes a melting pot for local and global tendencies, and the use and meaning of the plants are re-invented in various ways. Against this backdrop we discuss the evolution of the "Taste of Thy" as both naturalisation and "heritagisation" of certain local plants - and, in a wider sense, the places they grow.
