- Abstract
In this study the authors present the history and regulation of the public consumption of game meat in Hungary from the mid-nineteenth century to present day. Until the 16th century, hunting was the personal right of the free man. Previously, until the end of the 19th century, hunting was the sport of the nobility, the preparation of game meat dishes was the privilege of the manorial kitchens, and the consumers were also the noblemen. The most important step in the 19th century was the creation of Law XX of 1883 and the related decrees, which were intended to significantly increase the national income from hunting and to reduce poaching. Around the turn of the 20th century, a significant change took place, several eminent experts, including KÁROLY KELETI and ALBERT BEDŐ, recognised the economic importance of game meat, and as a result of their work, game management became a factor in the national economy, and game meat also became an element of public consumption. In the First World War, game meat played a key role in feeding injured and weakened soldiers, leading to a significant depletion of game. After the Second World War, during the socialist era, hunting and the sale of game meat provided the bulk of the Western currencies. As a result of world events and the evolution of the international and national political context, the legal framework and economic focus has changed constantly, but the epidemiological and economic reasons for the high priority given to this topic remain very relevant today. In this study the current legal framework is presented, including the food chain safety conditions for the public consumption of wild game meat and the provision of traceability. In the review the main shortcomings found during official controls are also summarised, with special regard to the storage and marking of shot game, illustrated with original photos. The ultimate aim of the study is to facilitate an efficient cooperation between veterinarians and hunters in the field of game meat production.
