- Abstract
With the purpose of evaluating the incorporation of whey on cattle feed, a diagnosis of use and production of this subproduct of dairy was realized, a structured survey was conducted, which was applied to 56 entrepreneurs from Frailesca, Chiapas, from the municipalities of Villaflores, Villa Corzo and La Concordia, a parallel study was conducted in bromatology in the ECOSUR laboratories in San Cristobal de las Casas, Chiapas. The results indicate that, the municipality of Villa Corzo is the largest producer of whey in the region, with about 54,000 L of whey per day, representing 50% of the regional production, although daily output could reach 106,000 L daily considering the amount of milk used for processing. Most whey is derived from the production of cheese and cream cheese. The main uses of whey are feeding pigs; making cottage cheese; however the greatest amount is discarded and deposited into tributaries of rivers, streams and lakes, or directly poured into the sewer. The nutritional quality of the whey is low in crude protein levels and really high in terms of humidity. It is concluded that in the Region Frailesca 56% of whey is discarded on the environment and even though it is low in protein content, the availability of it profiles it as a potential alternative in animal feed.
