- Abstract
The article examines the molecular cloning, functional expression, and tissue distribution of a potato sprout allene oxide synthase (AOS) which is involved in a 9-Lipoxygenase pathway. The results suggest that the potato enzyme system can produce 9R-α-ketol more selectively than does the typical non-enzymatic hydrolysis of allene oxides, which is observed in the reaction with other AOS.
