- Abstract
The present paper describes the comparative results of the biotechnological qualities of Saccharomyces carlbergensis strains, (SCL W 34 , SCL1, SCL2, SCL3, SCL4, SCL5) isolated in pure culture from residuary brewer's yeast. The following parameters were studied: total nitrogen content, viability of cells, crude protein and intensity of fermentation studied by determination of carbon dioxide. We concluded that dried yeast have lost part of their qualities during preservation processes.
