Food science: Taste bud hackers.
- Authors
Gravitz, Lauren
- Abstract
The article offers information on the screening of molecules to enhance tastes such as sweet and salty. It says that business of making taste enhancers and ingredient substitute for high-salt, high-sugar, and high-fat food is old. It states that Senomyx Inc. and Chromocell Corp. adapted high-throughput screening systems for drugs against G-protein-coupled receptors (GPCRs) and identify molecules. Moreover, researchers do not believe that taste enhancements needs to come from isolated molecules.
