- Abstract
The proposal of this work was to study the importance of food security for the quality of tourism product from a case study in the cities of Angra dos Reis and Mangaratiba, both located in the tourist region of Costa Verde in the State of Rio de Janeiro. One of the means to verify the food safety in tourism is through the analysis of the hygienic-sanitary aspects of commercial restaurants and lodging facilities. So, this study sought to ascertain whether the companies inspected properly followed the hygienic and sanitary standards recommended by ANVISA - National Agency for Sanitary Vigilance . In this study, such an analysis was done using a checklist drawn from resolutions of ANVISA and model script sanitary inspection of the Municipal Government of Rio de Janeiro - SMG "N" No. 641/2003 . With the results obtained in applying the checklist, it was possible to identify the demand for better professionalization of the F&B - Food & Beverage - sector in this tourist region . Several critical issues were identified in this study, revealing irregularities in the companies inspected related to structural conditions, maintenance of equipment and utensils, about health and proper professional uniformity, storage conditions of the water, taking action to combat the proliferation of vectors and pests, among other aspects . Therefore, this paper hopes to contribute to the diagnoses assessed contribute to tourism entrepreneurs private and public managers of tourism reflect actions and strategies that ensure a service of Food & Beverage in adequate conditions of safety, food safety and quality.
