- Abstract
The lack of awareness about the risks and causes of food borne illness, make households represent today the site of greatest incidence of outbreaks. Most of the population is unaware of the basic requirements and necessary to the implementation of good manufacturing practices, which aims at ensuring a safe food from the point of view of hygiene and sanitary. The objective of this study was to identify the knowledge of good practice in handling and hygiene among food handlers in homes located in Caxias do Sul - RS. Cross-sectional study, conducted with individuals responsible for the preparation of food in their homes. To obtain data on the knowledge of food handlers on best practices on handling and food borne outbreaks was a questionnaire containing information on age, gender, education, knowledge of best practices on handling and food borne illness. The study included 80 subjects the majority were female (85.0 %), the average age was 40 years (SD ± 11.86), we found a higher prevalence of individuals with higher education (33.8 %) and the majority of respondents (38.8 %) declared monthly income exceeding R$ 2,034.00. This study indicated that the majority of respondents would like to have more knowledge about the proper handling of food, but they do not seek.
