- Abstract
Skipjack tuna (Katsuwonus pelamis) fish is highly priced fish species in many countries including India.However, its shelf life is limited in iced condition which indicates the necessity of an efficient preservation method to improve its shelf life. Hence, the study was undertaken to assessed the effect vacuum packaging on the quality of skipjack tuna fish chunks during chilled storage. The biochemical characteristics like TVB-N, TMA-N, PV and pH showed an increasing trend throughout the storage period, but this increase was less pronounced in vacuum packed sample compare to air pack sample. The microbiological characteristic such as TPC was higher in air pack compared to vacuum pack samples. So, on the basis of biochemical and microbiological parametersraw air packed fish chunk had shelf life up to12 days, whereas vacuum-packed fish chunks had shelf life of 16 days at chilled storage.
