- Abstract
Background: Fresh fruits are an important vehicle of pathogenic microorganisms, as Escherichia coli O157:H7 and Salmonella enteritidis, being linked to foodborne illness. Currently, there is no information about microbiological quality of mangoes ready-to-eat traded at market and supermarkets of Lima (Peru). Objectives: The objective of this research was to determine the microbiological load of Enterobacteriaceae, Escherichia coli and Salmonella spp. in mangoes sold at market and supermarkets of Lima. Methods: Fifteen market samples and fifteen supermarket samples that had no bumps, lesions or other visible damages, were analyzed. The evaluated mangoes varieties were Haden, Kent and Kafro. Each sample was analyzed in order to determine the load of Enterobacteriaceae and Escherichia coli by using of Pour Plate and Most Probable Number (MPN) techniques of the ICMSF respectively. The presence of Salmonella spp. was determined using the ISO 6579:2002 method. Results: The results showed microbiological counts averages of 2.68 y 2.26 log CFU/g for Enterobacteriaceae in mangoes of market and supermarkets respectively. On the other hand, E. coli was not detected in 40 % of market samples nor 73.3 % of supermarket samples, however in the positive samples, the highest counts were 2.20 MPN/g for market samples in comparison to supermarket ones that obtained 1.60 MPN/g. None of the evaluated samples evidenced the presence of Salmonella spp. (Absent/25 g). Conclusions: According to obtained results, the evaluated mangoes meet with the microbiological criteria required by Minister of Health of Peru, for the category XIV. 1 Fresh fruits and vegetables (without treatment), under the R.M N° 591-2008/MINSA. This research shows that microbiological quality of supermarket mangoes is superior to market mangoes of Lima.
