- Abstract
This paper attempts to determine consumers' perceptions and attitudes towards food safety with reference to meat consumption. A survey was undertaken with 3,145 respondents interviewed via questionnaires to gather information regarding their opinion on food safety. Consumers' perception was analyzed using the factor analysis method. The factor loadings from the principal component factor analysis were obtained after a varimax rotation of consumers' responses to the 22 questions related to their views about perceptions of and attitudes towards food safety. The factors are ranked according to the proportion of variance explained, and labeled to reflect the latent stimuli underlying consumers' views about food safety on meat. The analysis identifies four key factors influencing people's opinions about the subject—government involvement, meat safety awareness, health consciousness and product potential. Based on the study, it was found that the demand and consumption of meat is still high, despite the recent food scare incidents in the country. However, many Malaysian consumers are becoming more vigilant while buying meat to adapt a healthier diet and lifestyle. This current trend will certainly have effects on the present market of meat. Hence, to ensure a better development of meat market, there is a need to formulate proper standards, policies and promotion programs for meat safety, and to step up the efforts of Research and Development (R&D) to improve the production technologies and food safety systems of meat.
