- Abstract
In the previous paper (part 1), the meatless product world market was characterized. Also, the health benefits of a vegetarian diet and nutrition value of QUORNTM meatless products which have been introduced to the American and British markets were described. In addition, the factors that determine the acceptance of new food product on the market were indicated. The aim of the second part of the study was to analyze consumer preference for meat and its substitutes, in particularly those produced from the mycelium of Fusarium venenatum. The results of the survey show that respondents were interested in QuornTM meatless products, which is a new type of food product in Poland. Also, growing interest in plant-based food and Polish consumer knowledge about healthy lifestyle lead to increasing interest in alternative high-nutrient food product based on microbiological sources.
