- Abstract
The article demonstrates that lactoglobulin, a protein present in cow's milk and a common component of human diet, binds also 8- and 10-carbon caprylic and capric acids, however with lower affinity. It discusses the results of the X-ray crystallographic and fluorescence spectroscopic studies. The apparent association constant for lactoglobulin complex with caprylic acid and for capric acid are also determined.
