- Abstract
The article presents how preserves with black and red currants are made and how currant crops are cultivated. It cites a recipe for making red currant jelly following the recipe from "Joy of Cooking" but with added water and sugar to solve the problem of too much pectin. It also indicates how currant roots are developed and planted including the main problems of looking out for the odd stem that rots and mosquito larva. It points out that currants and gooseberries should be pruned yearly. It mentions different experiences with mayhaws.
