- Abstract
The extraction process of cassia pigments was optimized by examining the variables such as ethanol concentration, solid-liquid ratio, ultrasonic temperature and ultrasonic time using the absorbance of cassia pigments as the response value and optimized by single-factor and response surface method at the wavelength of 278 nm. It was determined to be the optimal process condition at an ethanol concentration of 50%, a solid-liquid ratio of 1:30g/mL, an ultrasonic temperature of 60°C, and an ultrasonic time of 21 min. And the stability test of cassia pigments was conducted, the results showed that: Cassia pigments were not resistant to high temperature, suitable for storage in light protected conditions, both reduction and oxidation resistance were poor, and the preservative had no obvious effect on the pigment absorbance value. And the cassia pigment showed better color under alkaline conditions.
