- Abstract
Background: The polycyclic aromatic hydrocarbons (PAHs) are a group of nonpolar organic compounds, are composed of two or more fused benzene rings. Committee on Food, fifteen HAP show clear evidence of mutagenicity or genotoxicity in somatic cells of animals. Sources of PAH in foods are predominant environmental pollution and food processing. The presence of PAHs originates mainly by deposition of air pollution particles on its surface. The main problem of PAHs in health is due to the fact that some of them have proven to be highly carcinogenic and have been implicated in various cancers, especially breast, lung and colon. Pamplona-Colombia is characterized in that in this city there are no sources of air pollution and PAHs that can be found in the environment and in different cultures both potato and vegetable and fruit come from air pollutants produced by vehicles burning mobile sources circulating in the city of Pamplona. Objectives: The objective of this study was to identify potato pastusa the HAP15 considered mutagenic and carcinogenic by the IARC, in order to ensure food security of a consumer product in the province of Pamplona-Colombia. Methods: Organic matter (PAH) present in the potato pastusa was extracted by ultrasound using as a solvent dichloromethane and subsequent concentration by rotary evaporation. HAP cleaning is done in a column containing a mixture of silica gel and anhydrous sodium sulfate. The identification of PAHs was performed by gas chromatography with FID detector. Results: Of the HAP studied in the pastusa potatoes grown in Pamplona, naphthalene, 1-methylnaphthalene, 2-methylnaphthalene, acenaphthylene, phenanthrene, fluorene, pyrene, benzo(a) anthracene and a mixture of dibenzo (a, h) anthracene / indeno (1,2,3 c-d) pyrene trace level was found. Conclusions: The International Agency for Research on Cancer (IARC) has determined that the naphthalene, dibenzo (a, h) anthracene / indeno (1,2,3 c-d) pyrene are possible carcinogens in humans and come exclusively from the vehicle combustion from mobile sources using as fuel diesel.
