- Abstract
The article suggests solid-phase microextraction strategies (SPME) that can be used by the fish oil industry in monitoring oxidation products in marine oils. It urges the industry to replace the human taste panels with a laboratory method in measuring peroxide, anisidine, thiobarbituric acid and dienes. It recommends combining SPME with gas chromatography (GC) in determining the sensory profile of olive oil as volatiles cannot be detected through flavour. It advises adopting methods with high sensitivity and selectivity for volatiles.
