- Abstract
This article discusses the issue of food waste and by-products in the food industry and the need for their recovery and utilization. The article highlights the impact of food waste on food security, quality, safety, and the environment. It also explores innovative technologies that can be used to extract valuable components from food waste, such as electro-technologies, ultrasound-assisted extraction, and nanotechnology. The article emphasizes the importance of reducing food waste and by-products to achieve sustainable food production and meet the objectives of the 2030 Sustainable Development Goals. Additionally, it mentions the interest in using food by-products to produce alternatives to animal protein through solid-state fermentation. The article concludes by stating that more research is needed to address the challenges of reducing food waste and promoting food and environmental sustainability.
