AVALIAÇÃO DA QUALIDADE SANITÁRIA DE SOBRAS RALADAS DE QUEIJO TIPO PARMESÃO COMERCIALIZADAS EM SUPERMERCADOS NA CIDADE DE MACEIÓ/AL.

- Abstract
INTRODUÇÃO Os queijos, derivados do leite, são produtos muito manipulados e, por esse motivo, passíveis de contaminação, especialmente de origem microbiológica. Assim, faz-se necessário que os estabelecimentos que comercializem alimentos, obrigatoriamente adotem as Boas Práticas de Fabricação para reduzir os riscos microbiológicos na manipulação do produto. OBJETIVO O objetivo desse estudo foi verificar a qualidade sanitária das sobras raladas do queijo tipo parmesão comercializadas na cidade de Maceió/AL. METODOLOGIA Trata-se de um estudo analítico experimental. Foram adquiridas 5 amostras de sobras raladas de queijo tipo parmesão de 3 marcas comerciais, totalizando 15 amostras. Estas foram adquiridas em suas embalagens primárias, contendo o peso fracionado (média 250g) pelo estabelecimento, dentro da data de validade. As marcas comerciais foram identificadas por letras do alfabeto (A, B, C). As amostras das marcas comerciais A, B e C foram adquiridas em supermercados dos bairros da jatiuca, ponta verde e farol respectivamente. As amostras foram transportadas em caixa (temperatura até 7ºC) para o Laboratório. Foram realizadas análises microbiológicas para Escherichia coli (técnica dos tubos múltiplos), bactérias aeróbias mesófilas (técnica de semeadura por profundidade) com resultados expressos em Unidades Formadores de Colônias/grama e Unidades formadoras de colônias/grama respectivamente. No momento da aquisição das amostras, foi aferida a temperatura do balcão de comercialização com o auxílio de um termômetro digital infravermelho smart sensor ar 320 (-32°C - 380°C). A temperatura foi verificada em três pontos distintos para posterior realização da média. Os valores foram anotados em planilha especifica para posterior comparação, onde para alimentos derivados de leite, a temperatura máxima de armazenamento é de 7°C. RESULTADOS Em 100% das amostras não foi confirmada presença de Escherichia coli, porém em 100% ocorreu a presença de bactérias aeróbias mesófilas variando entre 2,1 x 103 a 5,3 x 105 . As temperaturas do balcão de distribuição apresentaram variação entre 10.5°C e 24°C, onde, 100% dos valores se encontravam acima da temperatura ideal. As amostras da marca comercial A e C eram comercializadas em balcões refrigerados tipo autosserviço, que trocam calor com o ambiente, portanto manter os produtos em balcões fechados poderia reduzir à temperatura em <10ºC. As amostras da marca B ficavam expostas m cima do balcão sem refrigeração, motivo para terem apresentado temperaturas maiores (21°C - 24°C). Não ocorrer presença da Escherichia coli é importante, pois é uma bactéria que indica contaminação de origem fecal. As bactérias mesófilas são indicadoras de abuso de tempo e temperatura e falhas na higienização e as bactérias causadoras de surtos de origem alimentar são mesófilas, portanto, uma contagem alta (105 ) pode indicar condições favoráveis para o crescimento. CONCLUSÃO Conclui-se que os estabelecimentos que comercializam queijos devem corrigir falhas na higiene e manter as sobras raladas de queijo tipo parmesão em temperaturas a ≤ 7°C. Alimentos proteicos são os mais envolvidos em surtos de origem alimentar, portanto a oferta de queijos contaminados pode ser um perigo a saúde do consumidor.
