- Abstract
To investigate the effects of long-chain esters on the releases of aroma components in sweet osmanthus concrete, a GC-MS method was established to quantify the long-chain esters. In addition, an APCI-MS method was built to compare the releases of aroma components between sweet osmanthus fragrances with or without long-chain esters, and a SHS-GC-MS method was developed to evaluate the correlation between the contents of long-chain esters and the releases of aroma components. The results showed that: 1) The precision of the quantitative method was good(RSD≤6.71%), the detection limit was low(LOD<0.46 μg·mL-1), and the linearity of each target was good (R2≥0.998). 2)The long-chain ester with the highest content was ethyl linolenate, both in sweet osmanthus concrete of Thunbergii and Latifolius, followed by ethyl palmitate, ethyl linoleate and methyl linolenate. However, the total content(15.1-24.4 mg·g-1)of long-chain esters in sweet osmanthus concrete of Thunbergii was significantly higher than that (2.6-7.5 mg·g-1) in sweet osmanthus concrete of Latifolius. 3)Long-chain esters changed the headspace concentration of aroma components of the sweet osmanthus concrete, and significantly improved the aroma of sweet osmanthus fragrance. With the increase of ethyl linolenate content, the releases of each aroma component decreased. With the increase of the content of mixed long-chain esters, the released amounts of trans-linalool oxide(pyran type), cis-linalool oxide (pyran type), γ-decalactone and linalool increased by 33.2%, 21.8%, 9.0%, and 2.5% respectively. 4) The contents of long-chain esters significantly affected the releases of aroma components in the sweet osmanthus concrete, and their influences on different aroma components differed greatly.
